Antioxidants are a group of several organic substances, including selenium, vitamins C, E, and A, and a group known as carotenoids. Antioxidants are abundant in fruits, vegetables, grain, and coffee. Antioxidants are vital to our health because, on a molecular level, antioxidants protect the body from free-radicals. Free radicals are the natural byproduct of many processes within and among cells. They are also created by exposure from various environmental factors, like tobacco smoke, and radiation. Free-radicals generally come in the form of O2 (dioxide). Within the body O2 wants to be oxidized, this oxidation process can be carcinogenic.
